Hibou

  • Tesse Restaurant 8500 Sunset Boulevard West Hollywood, CA, 90069 United States (map)

Hello Everyone!!!!

Please join us on Thursday, November 17th at 7pm as we welcome Jason Driscoll and taste the "hidden gem" wines of HIBOU.

A chef by training and a winemaker by trade, Jason Driscoll revels in food and wine’s wondrous ability to bring people together. He and his wife Hilary love to gather with everyone who plays a part in Hibou, whether it be their growers, cellar team, or wine club members. Jason’s first foray into winemaking was a job at Elsom Cellars, a small family business in Woodinville, Washington. He then moved to St. Helena, where Jason fulfilled his dream of becoming a chef at the Culinary Institute of America. Between kitchen apprenticeships and a stint working a Napa Valley harvest, his love for cooking translated into a love for winemaking, and ultimately, the slower pace and in-depth process of the cellar drew him in full-time. Over the past decade, Jason has immersed himself in the craft, collaborating with masterful winemakers, continually learning and refining. Hibou allows him to make wines that genuinely excite him. Sourcing from exceptional vineyards, he looks to each wine for its honest self-expression.

Hibou, by its very nature, is not marked by consistency. Being small enough to be nimble, their risk-taking approach for each new vintage is an open opportunity for them to explore and create. What started as just one Russian River Pinot Noir has progressed into a small yet ever-changing portfolio of Pinot Noir, Syrah, Cabernet Sauvignon, and Chardonnay from our favorite vineyards across Northern California.

The defining thread is their commitment to their growers and wine club members:

"We’re making the most thrilling, authentic wines we possibly can."
