Hello Everyone!!!!

Please join us on Wednesday, September 28th at 7pm as we welcome Bethany Ford and taste the game-changing wines from ILLAHE.

At Illahe, their goal is to make wine as naturally as possible from soil to bottle. Working by hand on small lots with age-old techniques and materials, their focus is to grow and make quality Pinot Noir and white wines that express the vintage and their varietal characteristics. Without using enzymes or additives, some of the wines are made entirely by hand, with no electricity or modern mechanization. They use a gentle wooden basket press and age their Pinot Noir in French and Oregon oak.

Quality wine starts with quality fruit in the vineyard. Their 80-acre, south-facing vineyard lives in shallow clay soils. With a commitment to dry agriculture and responsible water practices, they do not irrigate mature plants. As one of Oregon’s few horse-powered vineyards, they utilize a team of Percheron draft horses to mow and deliver grapes to the winery at harvest.

The 1899 Project

When Brad started making wine at Illahe he had been to France a few times and noted the use of horses in their vineyards, something that wasn’t happening to the same extent in Oregon. Illahe purchased a team of Percheron draft horses (Doc and Bea) and began working with them to mow in the vineyard and bring fruit to the winery at harvest. Brad’s interest in the horses grew to an overall interest in historical winemaking methods and how modern technology has changed wine. In 2011 they began the 1899 project, of making a wine without the use of electricity or modern mechanization. They wanted to continue the tradition of craft in winemaking, using their hands(sometimes feet) and a lot of soul to make something they truly feel connected to. As farmers, they feel a connection to the soil and they wanted to continue that to the finished product.

Side note regarding single tickets: If you buy one ticket with the intention of sitting with someone else, please notate who you will be sitting with in your reservation.
